Happy Hour | The Honey-Do

Start your cocktail hour or get-together, or the moment you finish cleaning out the garage, with this bittersweet beer-and-gin cocktail, the Honey-Do.

The Honey-Do

Ingredients

  • 1-12 oz. bottle of IPA* (definition below)
  • 1 tbs. honey
  • 2 tbs. lemon juice (fresh squeezed)
  • 1 tbs. orange juice
  • 1 oz. gin
  • Pinch of salt
  • 3 cubes of ice
  • Demerara sugar for garnish
  • 1 orange wedge for garnish

Lightly wet the rim of a pint or Tom Collins glass, or preferably a Weizen glass. Dip into sugar to coat the rim.

Combine the honey, citrus juice, gin and salt in a cocktail shaker with the three ice cubes. Shake for about a minute at full strength.

Strain into your sugar-rimmed glass.

Top with enough IPA to fill glass. This will be a slow pour, at a 45 degree angle if at all possible. 

Let foam settle a bit.

Garnish with the orange slice.

Makes 1 drink.

*An IPA – Imperial Pale Ale or India Pale Ale – refers to a beer made with an abundance of hops, different varieties and styles. Hops are used in all beers, but in the case of IPA, hops are the dominant ingredient giving it its robust, bitter flavor. This makes a great pairing for this citrus based cocktail.
