Family Fireside Food

What's the best part of the cold winter weather?  Eating a warm, comforting meal with your family by the fire.  Alysia Fuchs joins us with some great recipes.

Veggie Minestrone Soup

chopped carrots

onions

garlic

1 can tomatoes (diced)

can of beans (rinsed and drained)

kale bunch

cooked wagon wheel pasta

1 bunch veggie broth

1 tsp. oregano

1/2 tsp. chili powder

 

Saute veggies in oil, add remaining ingredients and simmer 1 hour.  Top with cheese and enjoy!

 

Indoor Smores

graham crackers

marshmallow fluff

hot fudge

 

Spread on crackers for indoor fun!

 

Apple Crisp

1/2 cup oats

brown sugar

1 tsp. cinnamon

1/4 cup butter

4 apples

1 lemon

 

Mix oats, sugar, butter, and cinnamon.  Set aside.  Cut apples into quarter slices, juice lemon and toss.  Put in baking dish, and top with sugar mixture.  Enjoy!
